packed puff pastries



My graduate program had a welcome back rooftop party so I decided to make these. I kinda made it up in my head as I went along so there's nothing really exact.

Here's a recipe:



2 packages Dufour puff pastry
1 1/2 pound package of meatloaf meat (that has a 1/2 pound each of  ground veal, beef and pork) or just buy them separately
1/2 pound ground lamb
a handful of fresh tarragon leaves chopped
a large handful of fresh oregano chopped
a bunch of fresh flat parsley chopped
8 cloves garlic chopped into small pieces(or to taste)
1/2 vidalia onion minced fine
fresh cracked pepper to taste
a pinch of cumin seeds ground up in a mortar and pestle (I ran out of powder)
a dash of ancho chili powder
a dash or three of Penzy's Arizona Dreaming spice mix
5 dashes of Hungarian sweet paprika
a dash of cayenne pepper
a couple dashes of Worchestershire sauce
a couple dashes of soy sauce
a dash of sweet balsamic vinegar
a teaspoon of chicken soup base (better than bouillon)
1/2 a small package of feta cheese
6 oz parmigiano reggiano
1/2 pound blue or gorgonzola
butter
2 egg yolks mixed with water for an egg wash



the puff pastry:

You can leave it out at room temperature for 40 minutes, or do like the package suggests and defrost in the fridge for 3 hours. My fridge did not really completely defrost it in more than 3 hours, but if you press your hand against the dough to warm it wherever it needs it will roll out fine.



the filling:

I started out by using some bacon ends I had to render oil for the onions and garlic to caramelize. You can use olive oil or nothing and just add them along with the meat. Once that was done I added the meat and cooked till browned and the juices were almost absorbed.

I drained the meat and put it back in the pan with a pat of butter to replace any oil lost, but not risk the puffs coming out soggy from too much liquid.

I added the freshly chopped tarragon leaves and oregano to the pan. Then I added the other seasonings. This was mainly trial and error, I didn't know what sort of flavor I was going for yet so I kept adding things till I liked the taste.

Once everything was cooked through I chopped up the fresh parsley and added it to the mix. Then I added the Parmesan cheese.

I let this sit on the stove for a while then popped it into my fridge in a container to cool more after adding half the package of Greek feta.

Once the mixture was cool enough I crumbled the blue cheese in and added it to the rest.

You will have half of this mixture left over and can use it on pasta or in more puffs later!



putting it together:

Pre-heat the oven to 375 F

Lay the pastry out on a floured board and roll out the rectangle to a 12x12 square. Cut 16 ~3 inch squares out of the sheet with a pizza cutter.

spoon a teaspoon full of filling into the center of each square.

moisten the edges of each square with egg wash and fold over. You can make triangles or rectangles. FYI rectangles are easier when you're tired of folding pastry.

Crimp the edges with a fork or if you're fancy, crimp them in a nicer way.  My crimping attempts tend to look like a dog got a hold of the edges and shredded them with its teeth so I still use a fork.

Place the puffs on parchment paper on a cookie sheet or in a roasting pan. You can pretty much use whatever you have handy.

Brush the egg wash on top of each.

Bake in the oven for 25-40 minutes or until the tops are browned and the pastries are puffed out plumply.

Repeat with the other package of pastry.

This will make 32 puffs.

a reasonable visit

We had a LOT of food... and walked all over the damn place.

My friends from WoW (the Reasons) stayed in Embassy Suites all the way out of the mf'in way north of Battery Park City and the stupid escalator/elevator for one of the bridges over the west side highway was broken so there was a lot of carrying stroller up the first day till they clued in on going up to Chambers St and walking across.


Thursday

went to get xiao long bao their first day here at Joe's Shanghai. Friend really liked them and she said the crab ones were better than the ones in Shanghai, mostly because they don't use much crab there, but that the pork ones were half aszed because you could taste they used chicken broth in the soup base instead of all porky goodness.

Then we had bubble tea at Quickly and I took them to Ferrara for some cannoli, gelato and other treats.

Friday

They came over and Marshall, the baby, came through like a hurricane.

Mallow hissed at him like three times and Mallow's only hissed twice in his whole life before then so you can tell how he feels about hyper babies.

We sat and they watched the Ghana/Netherlands WC game.

I was trying to bake a cake (nutella n chocolate bundt cake) for the longest but keeping a not-quite-two-year-old out of the kitchen and occupied is daunting.

I got it into the oven right before they left and then I had to wait for my stupid left handed mouse to be delivered.

They had to go out with their fam and they chose this very touristy spot called the View. For 15 people or so (including the kids) it came out to about 1200 bucks and a bunch of mediocre food.

BF and I went out to PJ Clarke's for burgers since it was close by and then they came over for the cake. We got some "fancy" beer for the guys (Piraat and Chimay )



Then we watched the second Family Guy Star Wars on hulu and I bought the first one to watch from iTunes.

Saturday

we got up relatively early and went to Jade Asian for dim sum:

watermelon tapioca dessert thingie. This was AWESOME. You know how I am about all things wallamelon. Plus it was extra sweet and red and the tapioca pearls were tiny.

We also had short ribs, shrimp shumai and my friend got congee with 100 year old egg in it, but iono where I put those pics.

We had bubble tea at Sago afterward, then sampled one meat on a stick from meat on a stick guy. She also picked up some lychee for a snack later.

Went back to their hotel and waited for some of their fam to get back and babysit all the kids (there were about 6-7 total between all the family members)

After that we went to Ippudo and they told us a 3 hour wait.. so I put my name down and then we went to saint's alp tea house and her husband's brother had bubble tea for the first time.

They've just finished renovating, but it still looks the same inside.

BF had a gingerbread bubble tea. I got this lychee slushie thing and it was yum.

Then we went to Pommes Frites .... got the sweet mango chutney and roasted garlic frite sauces. After that we stopped by Klimat for some polish beer then got the call that the table before us was paying.

The guys shared this thing of cloudy sake (I had a black plum wine that had a yummy brown sugar aftertaste)



This is salmon tatsu-age .. so it's deep fried and served with grilled pepper, this thingie I have no idea, lemon and the mayo that I didn't touch. The salmon was PERFECTLY salted and mmm.



BF and I shared an Akamaru Modern ramen which had more flavor. I asked for two eggs (for me, he says they're gross when they're only partly cooked) and a side of pork belly which you can see below. We ended up getting another plate of noodles cause he's a bottomless starch pit.





Then since her husband had talked about doner kebab so much I yelp'd this place called Yatagan and we walked there even though we were stuffed. He and I ordered one but I ate mine for breakfast the next day. The meat on the spit was very moist and succulent, but I was damn tired so I didn't take any pictures.

I even nabbed a skrawberry Jarritos from the Mexican food cart near the Christopher st 1 stop... the stairs have gotten even worse there, if you can imagine. They're supposed to be "fixing" them.

Sunday

We met them at Columbus Circle this morning and had a bit of Grom gelato (I got the stracciatella and the crema come una volta) before walking towards FAO Schwartz for kiddie goodness.

Stopped into Pop Burger for a quick bite. Loved the fries, burgers are so so. I've had their onion rings before and the fries are much better. Burger was the same both times.

So after going through the whole store leading Marshall along by dangling a new toy in front of him we came to the youngest child section and I found something I wanted.

It's cute and it's called ittybit from the Bunnies by the Bay collection



I can make it dance to music with my fingers and chuck it at his head if he says something silly.

This afternoon it was like 94 degrees. We went to this cute little japanese sweets shop in Rock Center called Minamoto Kitchoan.

I had a white peach sorbet right in the store because it was so hot outside. I was gonna take them to La Maison du Chocolat, but it's closed on Sundays.

We had pizza from Artichoke Basille for lunch. They're opening a larger place in Chelsea that will stay open till 5am with an expanded menu and bar. ^_^

Somehow I forgot to post these, but I went out to lunch in Hell's Kitchen with a WoW friend and I suggested we go to a Thai place I'd been meaning to try, Wondee Siam. I think there are about five of these, because the fifth one is up in my current neighborhood.

veselka... let the beet continue



So I just realized as I went to make this post that I had a whooooole lotta beet food yesterday.

After my schnitzel lunch I decided to call Veselka in the East Village for a Ukranian food fix.

I ordered the super meat combo platter which had stuffed cabbage, kielbasa, 3 types of pierogi (meat, sauerkraut & mushroom, potato), soup (I chose borscht), andsalad (with a great dill vinaigrette). I also ordered the raspberry cheese blintz appetizer to make it a full piggy experience.

Hoofed it down to the EV from work and picked up my haul. Then I strolled lazily up to the UWS stopping by Sunrise Mart on 9th for a lil Japanese treat fix.

This was a HUGE amount of food for the price. If I hadn't got the blintz I would have been under 20 on the whole thing!

I tried the salad first. I spotted the ample amounts of dill in the dressing and was wary because I hate dill, but it was delicious.

The borscht was amazing! It had tender chunks of meat inside and a few beans and was perfectly tart and savory at once.


Then I opened up the meat platter and put the beet relish on top.

Note: I almost put the raspberry sauce on top because they look awful similar, but I'm a fan of tasting/smelling things before I commit my food to it. Problem averted.

Now this was a mixed bag. I like the garlicky bite of the sausage but the thing that stood out most for me was the sauerkraut and mushroom pierogi. It tasted buttery on the inside and not too sour.

The meat pierogi was a bunch of tasteless mush and the potato one was kinda cold, very plump and very meh.

The stuffed cabbage was ok, but it suffered some of the same fate of the meat pierogi.

Even though I was stuffed I ate every last bit of the blintz after dousing it in raspberry sauce and sour cream.

So when I go back I know to just get an order of fried (the ones I had were boiled) mushroom and sauerkraut pierogi with a cup of borscht.
